Pasta Alfredo
Let me start by saying that this is the only meal I have made so far that Cameron will eat 4 bowls and STILL want more! I usually serve this with blackened or grilled chicken, steamed broccoli and garlic toast. But this is just the sauce right now. Hope you enjoy!
Ingredients
1/2 cup butter (I use I cant believe its not butter fat free baking sticks)
1 (8 ounce) package cream cheese (Again fat free)
2 teaspoons garlic powder
2 cups milk (Yep, skim)
6 ounces grated Parmesan cheese (Reduced fat here too!)
1/8 teaspoon ground black pepper

I've made this with both whole foods and with reduced fat and fat free, and I think it tastes great anyway. I just try to cut the calories where I can! Just use what you have on hand!
Start by melting the butter in a non-stick pan. After it has completely melted add the garlic powder and cream cheese. Stir and mix the two together until smooth.
After the cream cheese melts completely and is smooth start adding the milk a little at a time whisking the entire time...you don't want any clumps!! Keep whisking and adding milk till its smooth and completely incorporated.
After you stir in the milk, add the pepper and Parmesan to the sauce. I like to add a dash of nutmeg and oregano to it, but that's my taste. Stir it all together at a low simmer and let it thicken for a minute or two.
Make sure you pull out the pasta a few minutes before its ready so it can finish cooking in the sauce!
Stir the noodles into the Alfredo sauce and let them finish cooking in the sauce on a low simmer for a few minutes. This will allow the pasta to soak up the flavor of the sauce instead of the water it was boiling in...Making for a MUCH better pasta dish!
